Howdy Folks!  Welcome to my site for Birthday Cakes and this post filled with Birthday Cake Pictures.  I am thrilled you stopped by.  I am a retired school teacher in eastern Texas and I love to bake.  My grandchildren talked me into developing a site for birthday cakes.  So I got to work last summer (2011) and developed this blog chock full of  cake recipes and resources.   Everyday or so I work on this site adding a recipe or two, along with my other hobbies of gardening and painting animal and flowers on furniture.  So you can see I stay pretty busy.   I believe in birthdays and am always delighted when I can dig out a recipe and make a quick and easy cake for my friends and neighbors too.

I love the Internet and put together a wonderful source for ordering the things you might need to make your birthday creations and celebrations quick and easy and a success.  Go ahead and click on my collection of markets I brought to this site.  I do make an occasional dollar when you buy through me which is a lot of fun too!  But mostly I love the convenience of ordering on line as you can get the darnedest things for making birthday cakes!  I do love Amazon and I think you will too! There are only two types of cakes – butter and sponge type cakes.  Cakes that contain shortening are called butter-type cakes.  The other type that rely on beaten egg whites for leavening are called sponge-type cakes.  Within these cake categories there are a great many variations.  Butter cakes are sometimes called plain cakes and are made by either the conventional (creaming butter and sugar together) or one-bowl method.  Angel food cake is the most popular in the sponge-type group, which also includes sponge and chiffon cakes.  I have created a collection of cake recipes in these two categories and in a wide variety of taste!  I hope you enjoy…..

Decorate a birthday cake covered in peanut butter coated ladybugs or use a ladybug shaped cake pan for that special party!
Ingredients:
  • 1/2 cup shortening
  • 1 1/2 cups white sugar
  • 2 eggs
  • 2 tablespoons cocoa
  • 4 tablespoons red food coloring
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk
  • 2 1/2 cups sifted all-purpose flour
  • 1 1/2 teaspoons baking soda
  • 1 tablespoon distilled white vinegar
  • 5 tablespoons all-purpose flour
  • 1 cup milk
  • 1 cup white sugar
  • 1 cup butter
  • 1 teaspoon vanilla extract
Instructions:
  1. Grease two 9 inch round pans.
  2. Preheat oven to 350 degrees F.
  3. Cream shortening and 1 1/2 cups sugar.
  4. Add eggs and beat well.
  5. Make a paste of cocoa and red food coloring. Add to creamed mixture.
  6. Mix salt, 1 teaspoon vanilla and buttermilk together.
  7. Add alternately the flour with the milk mixture to the creamed mixture.
  8. Mix soda and vinegar and FOLD INTO CAKE BATTER.
  9. Do not beat or stir.
  10. Bake for 30 minutes.
  11. Icing: Cook 5 Tablespoons flour and milk over low heat till thick, stirring constantly.
  12. LET COOL THOROUGHLY!
  13. While cooling, cream 1 cups sugar, butter and 1 teaspoon vanilla. Beat this well till light and fluffy.
  14. Add to flour mixture and beat until of a good spreading consistency. DON’T ICE CAKE TILL COOL.
  15. Cover with peanut butter candy ladybugs, click on link below for instructions.
Notes:

Using ladybug cake pan: These directions came from Wilton’s Ladybug Cake Pan Instructions.

1) One 2-layer cake mix or ingredients to
make favorite layer cake recipe such as the one above.
2) Preheat oven to 350F or temperature per recipe directions.
Your cake will unmold easily, without sticking, when you
prepare the pan properly. Grease the inside of pan using a
pastry brush and solid vegetable shortening (do not use butter,
margarine or liquid vegetable oil). Spread the shortening so that
all indentations are covered. Sprinkle about 2 Tablespoons
flour inside pan and shake so that flour covers all greased
surfaces. Turn pan upside down and tap lightly to remove
excess flour. If any shiny spots remain, touch up with more
shortening and flour to prevent cake from sticking. (You can
use vegetable oil pan spray or vegetable oil pan spray with
flour, in place of solid shortening and flour.
Icing for Decorating:
3) Making Buttercream Icing
The thick, but creamy texture of this flavorful icing makes it ideal for
decorating. For best results, keep icing bowl in refrigerator when not in use. It can be refrigerated in an airtight container for up to 2 weeks. Rewhip before
using. YIELD: 3 CUPS.
1⁄2 cup solid vegetable shortening
1⁄2 cup butter or margarine
4 cups (1 lb.) sifted confectioner’s sugar
Cream butter and shortening with electric mixer. Add vanilla. Gradually add
sugar, one cup at a time, beating well on medium speed. Scrape sides and
bottom of bowl often. When all sugar has been mixed in, icing will appear dry.
Add milk and beat at medium speed until light and fluffy.
To thin for icing cake, add a small amount of light corn syrup.

Funny Birthday Cakes made with Popcorn?

Serves: 12-16
A funny looking birthday cake made with popcorn, M & M’s and marshmallows!
Ingredients:
  • 1 large package marshmallows
  • 16 cups air-popped popcorn
  • 1 pound plain M & M’s
  • 1 stick butter
  • 1 pound peanut M & M’s 1 small jar dry-roasted peanuts
  • Any seasonal candy such as candy corn for Halloween
Instructions:
  1. Melt butter and marshmallows together, but do not boil.
  2. Combine all other ingredients in large bowl and pour the marshmallow mixture over all.
  3. Butter hands and mix all well.
  4. Line well-greased Bundt pan with plastic wrap and press mixture into pan firmly.
  5. Let set for 15-20 minutes, preferably in refrigerator.
  6. Unmold and serve.

Sweet 16 Birthday Cake covered with Wilton Sugar Sheet, Zebra Print for a colorful and fun cake presentation!
Ingredients:
  • 3 cups sifted all-purpose flour
  • 1 tablespoon baking powder
  • 3/4 teaspoon salt
  • 1 cup milk, at room temperature
  • 2 teaspoons pure vanilla extract
  • 1 1/2 sticks unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs, at room temperature
  • 4 ounces bittersweet chocolate, melted and cooled
Instructions:
  1. Preheat the oven to 350°.
  2. Grease with butter two 9-by-2-inch round cake pans and line with parchment paper. Butter and dust with flour.
  3. In a bowl, mix the 3 cups of flour, baking powder, and salt.
  4. In a cup, mix the milk with the vanilla.
  5. Beat the butter at medium speed until light and creamy. Add the sugar and beat until fluffy, 4 minutes. Beat in the eggs, one at a time, scraping down the bowl.
  6. Beat in the dry ingredients in 3 batches, alternating with the milk mixture and scraping down the bowl.
  7. Mix 2 cups of the batter with the melted and cooled bittersweet chocolate.
  8. Scrape the remaining batter into the pans.
  9. Spoon the chocolate batter over the batter in the pans and swirl with a knife.
  10. Bake in the lower third of the oven for about 35 minutes, until springy.
  11. Let cool for 15 minutes, then run a knife around the edges and invert onto a rack.
  12. Peel off the paper, turn the cakes upright and cool completely.
Notes:

Buttercream Frosting

1 cup unsalted butter (2 sticks or 1/2 pound), softened
3-4 cups confectioners sugar, SIFTED
1/4 teaspoon table salt
1 tablespoon vanilla extract (almond, coconut milk, or lemon)
up to 4 tablespoons heavy cream

Beat butter for a few minutes with a mixer on medium speed.
Add 3 cups of powdered sugar and turn your mixer on the lowest speed until the sugar has been incorporated with the butter.
Increase mixer speed to medium and add vanilla extract, salt, and 2 tablespoons of cream and beat for 3 minutes.
If your frosting needs a more stiff consistency, add remaining sugar.
If your frosting needs to be thinned out, add remaining milk 1 tablespoons at a time.

All you have to do is peel and cut and presto you have your decoration in no time. Sugar sheets have a mild sweet flavor and work well with a fondant covered cake, cupcakes, etc and they also work well with this cake covered in a buttercream frosting.” – Fran

A Devil’s Food Cake decorated with Wilton’s Shimmering, Summer’s Beauty or Sweet Kaleidoscope design ideas and a butterfly cake pan!
Ingredients:
  • 2 cups cake flour
  • 1 3/4 cups sugar
  • 3/4 cup cocoa
  • 1 1/4 cups milk
  • 3/4 cup shortening
  • 3 eggs
  • 1 1/4 teaspoons baking soda
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon double acting baking powder
Instructions:
  1. Preheat oven to 350.
  2. Grease the inside of the butterfly cake pan using a pastry brush and solid vegetable shortening. (do not use butter, margarine or liquid vegetable oil).
  3. Spread the shortening so that all indentations are covered.
  4. Sprinkle about 2 tablespoons flour inside pan and shake so that flour covers all greased surfaces.
  5. Turn pan upside down and tap lightly to remove excess flour. If any shiny spots remain, touch up with more shortening and flour to prevent cake from sticking. (You can use
  6. vegetable oil pan spray or vegetable oil pan spray with flour, in place of solid shortening and flour.)
  7. Pour the cake batter into pan, and if necessary, spread the batter around with a spatula to fill all areas of the pan evenly.
  8. Be careful not to touch sides or bottom of pan.
  9. Bake cake on middle rack of 3 5 0 F oven for 30-40 minutes or until cake tests done.
  10. Remove cake from oven and cool on cake rack for 10 minutes.
  11. While the cake is still in the pan, carefully slice off the raised center portion of the cake as this allows the cake to sit more level and helps prevent cracking.
  12. To remove cake from pan, place cooling rack against cake and turn both cake rack and pan over. Lift pan off carefully. Cool cake at least one hour. Brush loose crumbs off cake.
  13. To transfer cake to serving board, hold a cake board against cake and turn both cake and rack over. Lift off rack. Hold another board against bottom of cake and turn cake over. Be sure to hold cake, rack and board close together while turning to prevent cake from cracking.
  14. In large bowl, measure all ingredients. With mixer at low speed beat until well mixed, constantly scraping bowl with rubber spatula. Increase speed to high’ beat 5 minutes, occasionally scraping bowl.
  15. Pour batter into pan as written above.
Notes:

Since butterflies all over the world come in a variety of colors, I’ve included the following additional flavors for your buttercream icing. You don’t have to stick to a white icing or buttercream flavor – try something different!

Chocolate Butter Cream Recipe for Cake Frosting

Make icing as above. Dissolve 2 ounces unsweetened chocolate in a little water or milk. Cool and mix into the icing.

Orange or Lemon Butter Cream Recipe for Cake Frosting

Grate the rind of an orange or lemon and rub into 1/4 cup of the sugar to be used for the icing. Make icing as above and color with a little yellow coloring.

Bake up an adorable Buzz Lightyear space ranger. This yellow cake is sure to please everyone at the party.
Ingredients:
  • 2 1/4 cups cake flour
  • 1 1/2 cups sugar
  • 3/4 cup shortening
  • 3/4 cup milk
  • 3 eggs
  • 2 1/2 teaspoons double-acting baking powder
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
Instructions:
  1. To bake cake: Preheat oven to 350°F.
  2. Grease the inside of the Toy Story birthday cake pan completely using a pastry brush and solid vegetable shortening (do not use butter,
  3. margarine or liquid vegetable oil).
  4. Spread the shortening so that all indentations are covered.
  5. Sprinkle flour inside pan and shake so that flour covers all greased surfaces.
  6. Turn pan upside down and tap lightly to remove excess flour. If any shiny spots remain, touch up with more shortening and flour to prevent cake from sticking.
  7. You can use vegetable oil pan spray with flour.
  8. In large bowl, measure all ingredients.

  13. Remove cake from oven and cool on cake rack for 10 minutes.
  14. While the cake is still in the pan, carefully slice off the raised center portion of the cake to allow the cake to sit more level and helps prevent cracking.
  15. To remove cake from pan, run spatula around edge, place cooling rack against cake and turn both cake rack and pan over. Lift pan off carefully.
  16. Cool cake at least one hour. Brush loose crumbs off cake.

add milk and beat at medium speed until light and fluffy.

Decorate with Wilton decorating bag, coupler, tips and icing color set.

TIP: For quick and easy birthday cake, the Toy Story cake mold pan can also be made from a 2-layer cake mix. Also purchase already made buttercream frosting.

  • 3/4 teaspoon baking soda
  • 2 1/4 teaspoons salt
  • 3/4 teaspoon ground clove
  • 3/4 teaspoon nutmeg
  • 2 1/4 teaspoon cinnamon
  • 3/4 cup soft shortening
  • 2 1/4 cups granulated sugar
  • 3 eggs
  • 2 1/4 cups sweetened thick applesauce
  • water
  • 1 1/2 cup light or dark raisins
  • 3/4 cup chopped walnuts
Instructions:
  1. Heat oven to 325 degrees F.
  2. Line bottom of 13″ X 9″ X 2′ pan with waxed paper.
  3. Sift together flour, baking powder, baking soda, salt and spices.
  4. In large bowl, with mixer at medium speed thoroughly mix shortening with sugar, then with eggs, until very light and fluffy about 4 minutes.
  5. Then mix in applesauce.
  6. At low speed, beat in flour mixture alternately with water, beating just until smooth.
  7. Mix in raisins and walnuts.
  8. Turn into pan.
  9. Bake 1 1/4 hour, or until cake tester comes out clean.
  10. Cool in pan or wire rack 15 min.
  11. Remove from pan; peel off paper; finish cooling on rack

The Outback Gingerbread Cookie Martini

Outback Gingerbread Cookie Martini – for another great Birthday Cake Shot Celebration!

“I have been looking for the Outback Gingerbread Cookie Martini recipe.  There are quit a few on line and the following recipe got good reviews.  Check it out and enjoy it for another type of birthday cake shot celebration!” – Fran

Ingredients:

1 ounce Ketel One vodka

1 ounce Baileys Irish Cream liqueur

1/2 ounce Kahlúa liqueur

1/2 ounce Monin Gingerbread Syrup

1/2 scoop vanilla ice cream — semi-melted

Whipped cream

Gingerbread cookie

Mix the first five ingredients over ice in a cocktail shaker and then shake well. Pour into a chilled martini glass and top with a nice portion of whipped cream and a gingerbread cookie.  This is another type of Birthday Cake Shot celebration cocktail but instead of a shot it is a martini which is a little more formal than throwing back a shot!  Have fun imbibing this delicious drink!

The flavor of gingerbread is the predominant flavor of ginger with the addition of  honey or molasses which gives it it’s unique taste.

Delicious Mocha Cupcakes

Moist and delicious Mocha Cupcakes.
Ingredients:
  • Mocha Cupcakes
  • 1 cup boiling water
  • 1 cup mayonnaise ( do not substitute light or low-fat mayonnaise for regular mayonnaise).
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1/2 cup baking cocoa
  • 2 teaspoons baking soda
  • Mocha Frosting
  • 3/4 cup confectioners’ sugar
  • 1/4 cup baking cocoa
  • 1/2 to 1 teaspoon instant coffee granules
  • pinch of salt
  • 1-1/2 cups whipping cream
Instructions:
  1. In a mixing bowl, combine water, mayonnaise and vanilla.
  2. Combine flour, sugar, cocoa and baking soda; add to the mayonnaise mixture and beat until well mixed.
  3. Fill greased or paper-lined muffing cups two-thirds full.
  4. Bake at 350 degrees for 20-25 minutes or until a wooden pick inserted near the center comes out clean.
  5. Cool in tins for 10 minutes; remove to wire racks and cool completely.
For Frosting:
  1. Combine sugar, cocoa, coffee and salt in a mixing bowl.
  2. Stir in cream; cover and chill with beaters for 30 minutes.
  3. Beat frosting until stiff peaks form.
  4. Frost the cupcakes.

Cream cheese and peanut butter combine to create a finger-licking-good frosting for this cake.
Ingredients:
  • 2 cups all-purpose flour
  • 2 cups sugar
  • 2/3 cup baking cocoa
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 eggs
  • 1 cup milk
  • 2/3 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup brewed coffee, room temperature
  • Peanut Butter Frosting:
  • 1 package (3 ounces) cream cheese, softened
  • 1/4 cup creamy peanut butter
  • 2 cups confectioners’ sugar
  • 2 tablespoon milk
  • 1/2 teaspoon vanilla extract
  • Miniature semisweet chocolate chips, optional
Instructions:
Cake:
  1. In a mixing bowl, combine dry ingredients.
  2. Add eggs, milk, oil and vanilla; beat for 2 minutes.
  3. Stir in coffee (batter will be thin).
  4. Pour into a greased 13-in. x 9-in. x 2-in. baking pan.
  5. Bake at 350 degrees for 35-40 minutes or until a wooden pick inserted near the center comes out clean.
  6. Cool completely on a wire rack.
Frosting:
  1. For frosting, beat the cream cheese and peanut butter in a mixing bowl until smooth.
  2. Beat in sugar, milk and vanilla.
  3. Spread over cake.
  4. Sprinkle with chocolate chips if desired.
  5. Store in the refrigerator.
